Pierre-Yves Colin is one of the leading lights of the new generation responsible for the dramatic increase in quality in Burgundy over recent years. He took over the winemaking here in time for the 1995 vintage and in ten years has turned it into the best address in the village of St-Aubin.There is a wide portfolio of wines here, including the most comprehensive range of St-Aubin whites that you can find. It kicks off with the Bourgogne blanc, La Combe, always a satisfying example. It then starts to get very serious with the St-Aubin AC, La Fontenotte. This is a well-placed 'village' vineyard at the bottom of the hill of the best premier crus, and it is the best example of a St-Aubin AC white that we know. There are then six white premier crus but we tend to focus on the St-Aubin en Remilly, as it usually has just a touch more class. Try these two wines in 2003 as Pierre-Yves was one of the few white winemakers who got it absolutely right, they are very rich and generous and when St-Aubin is this good it offers the best value white wines in the Cote-de-Beaune. There are then two gorgeous village Puligny-Montrachets, the 'fat' Enseignieres and the 'mineral' Trezin. Both demonstrate just how good Puligny AC can be. These are followed by some premier cru Chassagne-Montrachet. Pierre-Yves produces one of the best Chassagne Caillerets, always rich with plenty of body & structure, and serious definition on the palate. The second Chassagne premier cru is the Champ-Gains, just as serious as the Caillerets but different in style. It is a little 'prettier', a tadge more floral, a lot of finesse & lovely length. We finish the whites with the grand cru, Le Montrachet, but unfortunately there is usually only one barrel as the parcel is so small. Pierre-Yves also makes one of Burgundy's great bargains, his red St-Aubin AC, made to be enjoyed young it is a lovely easy drinking bottle of Pinot Noir.
