Description
Intense, dark ruby color with enticing aromas of ripe, black plums and black currants. The richly textured plum and currant flavors are joined by accents of dark chocolate and some vanilla-scented oak. The ripe, vibrant tannins give the wine beautiful structure and an amazingly long finish.
History
The winery has a simple and unique style specifically designed for the production of high quality wines. On arrival at the winery, the grape clusters are placed on an inspection conveyor to be carefully checked and sorted before stemming and crushing.
All the stainless steel fermenting tanks have double external coils in order to lower the temperature during fermentation or raise it during malolactic fermentation.
The winery utilizes thermal insulation so that the wine can be kept at a constant temperature of less than 15A degrees C year round. The sizes of the tanks, their shapes, characteristic necks, doors and opening systems allow the easy and precise management of the fermenting juices and the entire fermentation process. The quality of the heating/chilling equipment, the pumps, the pneumatic presses and the rest of the winery's machinery ensure the gentle handling of juice and pomace, without generating unnecessary damage or aggressive extractions that may result in undesirable sediments or rough aromas in the wines.
